The quest for that perfect Beef Vindaloo

There’s a restaurant in Toronto that I used to live down the street from that had a beef vindaloo dish I was practically addicted to. I don’t live near there any more so I began fiddling around with different ingredients until I could come up with something at home that I liked almost as much, at least. The ideal should actually be a little on the buttery side, slightly sweet and very spicy. 

First, chop about the onions and slowly fry them in butter until they are brown. Remove the onions and set aside, then add more butter and fry up about a pound or two of cubed stewing. Once it’s browned, toss in a glass of red wine. Let the alcohol evaporate, then add the onions back in.

At that point I stir in enough crushed tomatoes to cover the meat. 

Then I add the spices: 2 – 3 green chilis, cut in pieces, depending on how hot you want it. Then the cumin, curry paste, coriander powder, and a dash of powdered cardamom seeds, a dash of cloves and a bay leaf. Then I add a few cloves of crushed garlic, and about a teaspoon of minced ginger. I cover it and let it simmer for about an hour, then add salt and sugar to taste, and then add either more cumin or more cardamom to balance the sweet with the bitter or sour.

At that point, I then cube a large potato or two and add it to the stew, along with some more garlic and ginger, then let it simmer for another hour. 

Beef Vindaloo

1 ½ – 2 lbs beef
3 – 4 onions
4 – 6 Tbsp butter or oil
2 – 3 cups crushed tomato
1 cup red wine
4 – 5 cloves garlic
1 – 2 tsp ginger
2 – 3 green chilli peppers, cut in two
1 Tbsp curry paste
4 – 5 cardamom pods
1 bay leaf

Salt, sugar, cumin and cloves to taste

What is stupidity?

I wonder that sometimes. Even people I consider mostly stupid will sometimes refer to someone else as dumb.

Is it the absence of intelligence, the way that cold is simply an absence of heat?

Or is it something more…

It strikes me, long observing people, that a lot of the time stupidity is simply laziness, only it’s the brain rather than any muscle that people avoid exercising. Thinking, like anything else, takes a degree of effort.

It’s easy to go through life on autopilot, not really conscious of one’s surroundings most of the time. Not tuned in. Not paying attention. Not engaging in the world outside.

Some forms of stupidity strike me as someone simply not ‘switching on’ for even a moment.

Been a bit lazy here

I’m not sure why exactly I created a blog except that it seemed like a good idea. Of course, it’s now two months since I registered it and haven’t made any posts yet.

It’s not like I don’t have ideas. Or time to write them out.

Just… lazy…

Though it’s not always a bad thing.

Yet another blog for the pile

This isn’t my first blog, but it is a new handle. I’ve several others I’ve neglected and then long forgotten the password, or even the email address I used to register the thing to begin with.

And each time I put up a new WP blog, there’ve been so many changes it’s like starting from scratch anyway.

I’ve chosen the name ‘lone perspective’ because ultimately I see the world through only my own lens, filtered through my own life experiences, interests and so on, and the posts I intend to put out there will be from that same perspective. My views are far from simplistic and I expect to rile and challenge people as much as I expect them to like or agree with what I express.

At times I may adhere to ‘the status quo’ and at others, quite the opposite. And occasionally I change my mind about things. Only to change it back with the next thing I read. The most important thing for me is to not take it all too seriously.

So warning, there are times when I may offend someone, somewhere. If I do, I put responsibility on the reader as much as on myself for anything.

I’ve yet to decide the direction this blog will take – what it will be about – so for now… we’ll see…
